Pin-tastic:food edition

today i thought i would share some of my current favorite food pins

1. the single serving microwave chocolate chip cookie.
(original source)
(original source)
4. Red Lobster Cheedar Bay Biscuits
(original source)
 5. Nutella and Cool Whip pops
(original source)
I have made all of these recipes except for the Nutella/Cool Whip pops, but lets be real....how can Nutella and Cool Whip go wrong?  I made that cookie last night to share with the hubs....and let me tell ya...it was good (tip: get creative! add peanut butter chips, nutella, or just nuts).  That rice was awesome and if you make a lot at once you can eat off of it for a week.  Lets have a chat about those fake Cheedar Bay Biscuits for a min.
These biscuits....man...these biscuits are AMAZING! I may have eatten a couple straight out of the oven...molten hot and everything.  I have made this recipe a couple of times and would not change a thing.  They even warm up great (wrap in paper towel and nuke for 15-30sec). Tip: if you dont keep Biscuick in the house your store may sell the small pouches of Biscuick, which you need exactly 2.
Im always on the hunt for good recipies.  Follow my "Foodie Files" pin board for more yummy recipies!

sweet treats: cinnamon sugar nutella tortilla

had Nutella and cinnamon sugar tortillas been around during the time of the gods....im pretty sure todays "sweet treat" would have been their definition of ambrosia (food of the gods).
it sure as heck is my definition of ambrosia

What you need:
Nutella or any form of generic store brand Hazelnut spread with cocoa (i have Kroger brand) its just as good as Nutella
Cinnamon Sugar Flour Tortillas.  Now if you dont live in the south and cant get your hands on fresh made cinnamon sugar tortillas (also from Kroger) dont worry.....you can use a regular flour tortilla and just sprinkle on some cinnamon and sugar mixture before you add the Nutella
you will also need a small pad of butter....not margarine, not light cooking oil.  you need real BUTTER y'all (*me channeling Paula Dean).

Directions:
-add small pad of butter to skillet and let it melt
-add tortilla to skillet and coat both sides with melted butter
-let the tortilla "toast and/or fry" on both sides til it starts to brown and get crispy
-take tortilla out of skillet and spread liberal amounts of Nutella on the hot tortilla
(if you dont have pre-made cinnamon and sugar tortillas, sprinkle cinnamon and sugar mixture on to your hot tortilla before you add the Nutella)

this is a super easy and fast little treat....and man-o-man is it delish.  i wont judge if you make yourself two of these things....i had two last night.....okay okay ill admit it....i had two and a half of these last night.   and they were goooood!!

the weekend:in pictures

sorry its been a while since my last post but life got crazy last week....and with a plumbing emergency sunday and monday nothing else has gotten done.

friday...atleast i think it was friday....dave and i went to China Town and got Bahn Mi subs for dinner.  i know....i know...Bahn Mi is Vietnamese but this restaurant, Grival, is in China Town.  Folks let me tell you they make the best Bahn Mi subs....ever!!! so so so yummy.  afterwards we went to the Asian Grocery Store and bought a big box of Hello Panada Cookies and some Green Tea ice cream.....omg so good.
saturday i had to deliver cupcakes to my friends son's 2nd bday party....we had lots of fun...but it was wicked crazy hot outside.
if you look at the temp on my rear-view you can see it says 106...106 people and probably 90% humidity.....good 'ole Texas summers. ick.  at one point during the day my temp read out actually said 108....yikes.
dave and I started a new cross-stitch project...a large Zelda alphabet and i started sewing together the hundreds of mini granny squares (each square equals 1 pixel - about 3" each) that will eventually make an afghan that looks like my pattern on the far right.....ive been working on this thing for probably a year now and im so ready to have it done.
the pattern is based on this tile work....wicked is awesome btw.

ill be back later with a new NowPlaying:Tuesday.

I saw this post on The Kitchn and had to re-post it here...enjoy

There's nothing terribly original about pouring beer over ice cream; if nothing else, root beer keeps us reminded of that tradition. I've been lazy with my beer and ice cream pairings — who isn't? — and so it wasn't until recently when a guest brought over a bottle of super-sweet Framboise Lambic, a raspberry beer of sorts, that I gave some serious thought to pouring boozy brews over ice cream.

So while the dinner guests were mixing their crimson red beer with Prosecco, I fell into a lambic float daydream.
Lambic is a Belgian relative of beer, but not exactly a close sibling. It is made in open vats where things are allowed to go wild. The result is a cloudy beer, only mildly carbonated and with a sour taste. Many lambics are brewed with fruit, bringing in sweetness to balance out the sourdough-like flavor.

The most widely available brand of lambic is Lindemans. They make a cherry (Kriek), raspberry (Framboise), apple (Pomme), black currant (Cassis), and peach (PĂȘche) lambic. All are great over a scoop or two of vanilla (or other) ice cream, but my favorite is the cherry, and that was dessert last night. Perfect for a hot summer evening. I'm sure it's not bad in cooler seasons either.

Lambic Float
serves one

1-2 scoops vanilla ice cream
4 fluid ounces (1/2 cup) lambic

Place a scoop or two of ice cream in a glass. Top with the lambic. Serve immediately with a spoon.

ive not tried this yet, but i have had lambic before and let me tell you its delish....so there is no way that this would not be even better. guess who is making a stop at kroger on the way home...me!!

UPDATE --> so i tried this when i got home today and it was delish. i had to buy the framboise (raspberry) flavor because the kroger didnt have the cherry or any of the other flavors. really really yummy...i would recommend it!

two bottles of wine and a bowl of pasta

i hang out/eat dinner with two of my favorite girls at least once every month....and its always a good time. last night we meet at Collina's Itallian Cafe...and i gotta say it was pretty good. the cool thing...in my opinion...is that its BYOB!! there are several restaurants around Houston that will let you bring your own wine in but they charge a $5-$15 "corking fee." (for those that dont know what a corking fee is-its when they charge you to open your bottle and use their glasses and drink your own wine...sort of like they are punishing you monetarily for not buying their wine) anywho....they dont charge a corking fee. so we brought a bottle of my favorite red "Cupcake Cabernet Sauvignon" and my friend brough a yummy Pinot Grigio named "Italo Cescon." We didnt finish the bottles...we had to drive afterwards...but it made for a fun evening. Here are a couple pics i thought id share.

if you want a laid back itallian cafe vibe for dinner i would recommend it. the pasta and pizza was really good...good prices...wait staff was nice and not pushy.

i will have a Friday DIY up tomorrow....stay tuned kids.
